Crispy French Toast Bites
- 1 lb. loaf of sturdy artisan-style bread
- 6 eggs
- 1 c. milk
- 1 T. vanilla
- 1 t. ground cinnamon
- butter
- Cut bread into 1” thick slices; trim crusts; cut bread into 1” cubes.
- In bowl, beat eggs, milk, vanilla and cinnamon.
- Add 2 c. of bread cubes and mix to saturate.
- Lightly butter a 12” nonstick frying pan.
- Place pan over medium heat.
- Lift cubes from mixture, shaking off excess liquid.
- Add cubes to hot pan and cook, turning as needed, until golden brown. Keep warm.
- Repeat and soak and cook remaining cubes.
