Simple Chicken Stew
- 1-2 fryers, cut into pieces, seasoned
- Olive oil or vegetable oil
- Salt, red/black pepper, garlic powder
- 2 large Vidalia onions, thinly sliced
- 1 of each color bell pepper (red, yellow, orange, green), cut into strips
- 3 T. minced garlic
- 1 (8-oz.) carton sliced mushrooms
- 1 packet of McCormick’s brown gravy mix
- 2 c. chicken broth
- 1 regular size can diced tomatoes with liquid
- Fresh dill
- Water
- In large pot, heat oil. Brown chicken on both sides. Drain on paper towels.
- After browning, drain off excess oil from pot.
- Add onions and bell peppers and saute for 2-3 minutes.
- Add the garlic, mushrooms, tomatoes, gravy mix and stir to mix well.
- Add the broth and stir until all ingredients are blended.
- Nestle chicken into the gravy mix. Add enough water so that the gravy covers chicken by 2”.
- Simmer for 45 minutes or until chicken is tender and gravy thicken.
- Add fresh dill or parsley or green onions.
***Serve with hot rice, mashed potatoes or egg noodles.
