Delicious Greek Yogurt Mashed Potatoes
- ¾ lb. Yukon gold potatoes, peeled and cubed
- ⅓ c. plain Greek yogurt
- 1 T. olive oil
- ¼ c. minced green onion
- 1 T. minced lemon zest
- Salt, black pepper to taste
- Boil potatoes in pot of salted water until tender.
- Drain potatoes and return to pot.
- Cook potatoes over medium heat, stirring to remove excess moisture.
- Mash potatoes to desired consistency.
- Stir in yogurt, oil, green onions, and zest.
- Season to taste.
