Irish Soda Bread

Ingredients
  • 2 ½ c. flour
  • 2 ¼ c. whole wheat flour
  • ¾ c. rolled oats
  • 1 T. plus 1 t. baking powder
  • 2 t. sugar
  • 2 t. salt
  • ¾ t. baking soda
  • 1 ¾ c. buttermilk
  • 6 T. unsalted butter, melted and cooled
Instructions
  1. Preheat oven 350.
  2. In medium bowl, whisk flours, oats, baking powder, sugar, salt and baking soda.
  3. Add the buttermilk and cooled butter and stir with a wooden spoon until dough is well combined.
  4. Turn dough out onto a lightly floured surface and knead it 10 times.
  5. Shape dough into a 9” round loaf and transfer to baking sheet.
  6. Slash and “X” about ¼” deep into top of the bread.
  7. Bake for 1 hour or until bread is golden and bottom sounds hollow when lightly tapped.
  8. Transfer bread to wire rack and let cool completely.
