Greek Garden Wraps
- 1 c. plain Greek yogurt
- 1 T. chopped fresh mint
- 1 T. chopped fresh chives
- 1 T. chopped fresh parsley
- Kosher salt, black pepper
- 1 ½ c. shredded carrots
- 1 ½ c. sliced cucumber, thinly
- ½ c. thinly sliced red onion
- ½ c. cooked edamame or your favorite bean or pea
- 4 sheets soft Mediterranean flatbread
- 2 fresh tomatoes, halved and thinly sliced
- In bowl, combine yogurt, herbs, salt and pepper.
- In another bowl, combine carrots, cucumber, onion and beans or peas.
- Lay 1 sheet of flatbread on work surface, with long edge parallel to the table.
- Spoon about ¼ of yogurt mixture lengthwise down the center of flatbread.
- Lay ¼ of sliced tomatoes over yogurt, then about ¼ of the carrot mixture over this.
- Fold 1 side of flatbread over veggies and roll up to meet the other side.
- Secure with toothpicks, then cut in half.
- Repeat for the other 3 sheets of flatbread.
****You can also sub other veggies or use broccoli slaw and crumbled cheeses like feta, etc.
