Breakfast or Lunch Waffle Sandwiches
- 1 slice Canadian bacon
- 1 large egg
- 1 green onion, chopped
- Salt, black pepper
- 2 frozen Multi-grain waffles
- Shredded cheddar cheese
- Sliced tomato
- In nonstick skillet, coat with PAM.
- Cook the bacon over medium heat, 1-2 minutes on each side or until lightly browned.
- Remove and keep warm.
- In bowl, whisk egg and green onion and add to skillet.
- Cook and stir egg until thickened.
- Season with salt and pepper.
- Prepare waffles according to pkg. directions.
- Place one waffle on plate.
- Top with bacon, scrambled egg, sprinkle with cheese and top with sliced tomato.
- Top with remaining waffle.
*****Optional, you can butter each side of waffle if needed.
