2 ½ c. crushed chocolate graham crackers or wafer cookies
¼ c. sugar
½ c. melted butter
1 egg white, lightly beaten
FILLING:
2 (8-oz.) pkgs. cream cheese, softened
1 c. sugar
2 t. vanilla extract
2 large eggs
½ c. sour cream
2 T. flour
½ t. red food coloring
Garnish: whipped cream, berries
Instructions
Preheat oven 350. In small bowl, combined ingredients for crust. Press the mixture into bottom and halfway up sides of 24-c. miniature muffin pan. Bake 6-8 minutes. Remove and let cool.
In large bowl, beat cream cheese, sugar and extract with electric mixer until creamy.
Add eggs, one at a time, beating well after each addition.
Stir in sour cream, flour and food coloring.
Spoon batter into prepared crusts and bake 15-18 minutes or until centers are set.
Cool completely.
Store covered in refrigerator from 3-5 days. Garnish with whipped cream and berries.
