Warm Potato and Green Bean Salad
- 1 lb. small red potatoes, quartered
- ¼ c. good quality olive oil
- 3 T. apple cider vinegar or white wine vinegar
- Salt, garlic powder, ground mustard, black pepper, dried basil, parsley flakes, to taste
- 1 lb. fresh green beans, cut into 2” pieces
- 1 pt. cherry tomatoes, halved or chopped
- 3 T. chopped red onion
- Place potatoes in large pot of cold salted water.
- Bring to boil and cook for 10 minutes or until tender.
- Meanwhile, in bowl, whisk oil, vinegar and seasonings to taste.
- Add the green beans to the potatoes, return to boil.
- Cook 3-5 minutes or until tender.
- Drain.
- Place potatoes and beans in a bowl and add the dressing to coat. Mix well.
- Add tomatoes and onion. Mix. Taste for seasoning.
- Serve warm or room temperature.
