Zesty Skillet Garlic Shrimp
- 2-3 lbs. fresh, large shrimp, peeled (leave tail on, if desired)
- 3 T. minced garlic
- 1 (8-oz.) container fresh pico del gallo or freshly diced ripe tomato
- 1 t. red pepper flakes
- ¼ c. fresh lemon juice
- Good quality extra virgin olive oil
- ¼ c. white wine
- Sea salt, fresh black pepper
- Freshly chopped parsley, garnish
- Preheat oven 375.
- In a bowl, season shrimp with salt, pepper and pepper flakes.
- Add the garlic, pico or tomato, lemon juice and white wine.
- Drizzle olive oil to coat.
- Mix well.
- Spray skillet with PAM and drizzle a little olive oil in bottom to coat.
- Place the shrimp mixture into the skillet and spread out.
- Bake for 10-12 minutes or until pink or done (depending on size of shrimp.)
- Remove from oven and garnish with parsley.
*****Serve with a nice crusty bread for dipping.
