Nutty Pecan Coffee Cake

Ingredients
  • 1 pkg. yellow cake mix
  • 1 (3.4-oz.) pkg. instant vanilla pudding mix
  • 1 c. sour cream
  • 4 large eggs
  • ⅓ c. canola oil
  • 1 T. vanilla or orange extract
  • Zest of one orange
  • ½ c. chopped pecans
  • ⅓ c. sugar
  • 1 T. ground cinnamon
  • ½ c. powdered sugar and or ½ c. light brown sugar.
  • 3 T. orange juice
Instructions
  1. In large bowl, combine cake mix, pudding mix, sour cream, eggs, oil, zest and vanilla.
  2. Beat on low for 30 seconds.
  3. Then beat on medium for 2 minutes.
  4. Pour into greased 13x9” baking pan.
  5. Combine pecans, sugar (you can do both powdered or brown sugar or just the powdered sugar) and cinnamon. Sprinkle over batter.
  6. Cut through batter with knife to swirl the pecan mixture.
  7. Bake 350 for 30 minutes or until toothpick inserted in center comes out clean.
  8. In small bowl, combine powdered sugar and orange juice. Mix until smooth.
  9. Cool cake on wire rack but drizzle the orange mixture over it while cooling.
