Basil Pesto Roasted Asparagus
- 1 lb. fresh asparagus, washed and woody stems removed
- Kosher salt, black pepper, garlic powder, lemon pepper
- 1 (5-oz.) jar basil pesto
- 1 (6-oz.) container fresh pico de gallo
- Juice of 2 lemons
- Zest of 1 lemon
- In a shallow baking dish, place the washed and stemmed asparagus in bottom.
- Drizzle the basil pesto all over the asparagus. With your hands, try to rub the pesto all over the asparagus.
- Season with salt, pepper, garlic powder and lemon pepper.
- Run the pico down the center of the asparagus.
- Squeeze the lemon juice all over the dish.
- Sprinkle the lemon zest all over the dish.
- Roast in 350 oven for 12-15 minutes, depending on thickness of asparagus. You want them sort of crispy but not tough or soggy.
