Gooey Belgian Beer Fondue

Ingredients
  • 2 c. shredded Gouda cheese
  • 2 c. shredded Emmental cheese
  • 2 T. cornstarch
  • 1 ½ c. Belgian beer*
  • 1 garlic clove, smashed and peeled
  • 1 T. fresh lemon juice
  • 1 T. honey
  • 2 t. Dijon mustard
  • 2 t. whole-grain mustard
  • Salt to taste
  • Sliced apples, pears, sausages, bread cubes, veggies, for dipping.
Instructions
  1. Toss the shredded cheese with the cornstarch. The cornstarch prevents the fondue from becoming grainy.
  2. Heat beer and garlic in saucepan until simmering.
  3. Stir in cheeses a handful at a time, letting each addition melt fully before adding next.
  4. When all cheese has been added and melted, stir in lemon juice, honey, mustards and salt.
  5. Transfer fondue to a warm fondue pot and serve immediately.
Notes
*****Try different Belgian Beers such as Blonde/Golden Ale, Dark/Strong Ale or Kriek Cherry Lambic.
