Grilled Jalapeño-Lime Corn on the Cob
- 8 ears fresh corn, husks removed
- PAM
- Salt, black pepper
- ½ c. butter, softened
- 1-2 jalapenos, seeded and minced
- 2 garlic cloves, smashed or pressed
- 1 T. lime zest
- 2 T. fresh lime juice
- 1 T. fresh chopped cilantro or parsley
- Lime zest, garnish
- Preheat grill 350-400.
- Coat corn with PAM.
- Sprinkle with salt and pepper.
- Grill corn, covered with grill lid, 15 minutes or until golden brown, turn occasionally.
- Stir together butter, jalapenos, garlic, zest, lime juice and cilantro.
- Remove corn from grill and cut into ⅓ pieces.
- Serve corn with butter mixture and garnish with extra lime zest.
*****You can increase the amount of ingredients mixed with the butter to suit your taste.
