Mugful Black Bean and Tortilla Soup
- ¾ c. chicken broth
- ½ c. canned black beans, rinsed and drained
- ¼ c. salsa
- 1 T. chopped cilantro or parsley
- 1 T. fresh lime juice
- 5-6 crushed baked tortilla chips
- 2-3 T. shredded Mexican cheese blend
- Salt, pepper to taste
- Tabasco, optional
- Chopped green onions, garnish
- Combine broth, beans and salsa in the microwave safe mug.
- Microwave for 2 minutes.
- Add cilantro and lime juice.
- Stir and season to taste.
- Top with chips and cheese.
- Microwave 30 seconds.
- Garnish with chopped green onions. Tabasco is desired.
