Glorious Strawberry Lemonade Cake

Ingredients
  • 1 c. butter, softened
  • 2 c. sugar
  • 4 large eggs, separated
  • 3 c. cake flour
  • 1 t. baking powder
  • ⅛ t. salt
  • 1 c. milk
  • 1 T. lemon zest
  • 1 T. fresh lemon juice
  • Shortening
  • Strawberry-Lemonade Jam
  • Strawberry Frosting
  • Whole Strawberries, garnish
Instructions
  1. Preheat oven 350. Beat butter with electric mixer until creamy.
  2. Gradually add sugar, beating until light and fluffy.
  3. Add egg yolks, one at a time, beating until blended after each addition.
  4. Stir together flour, baking powder and salt.
  5. Add the flour mixture to the butter mixture alternately with milk, beginning and ending with flour mixture.
  6. Beat at low just until blended.
  7. Stir in zest and juice.
  8. Beat egg whites in large bowl at high speed until stiff peaks form.
  9. Gently stir ⅓ of egg whites into batter. Fold in remaining egg whites.
  10. Spoon batter into 4 greased (with shortening) and floured 9” round cake pans.
  11. Bake for 15-20 minutes or until a wooden pick inserted into center comes out clean.
  12. Cool in pans in on wire racks for 10 minutes.
  13. Remove pans and place cake on wire racks until completely cooled.
  14. Place 1 cake layer on serving platter and spread with ½ c. of Strawberry-Lemonade Jam, leaving ½” border around edges.
  15. Spoon 1 c. Strawberry Frosting into a zip-top plastic freezer bag. Snip 1 corner of bag with small hole. Pipe a ring of frosting around cake layer just inside the top edge.
  16. Top with second and third cake layers, repeating procedure with filling and frosting between each layer.
  17. Top with last cake layer and spread remaining Strawberry Frosting on top and sides of cake. Garnish with whole strawberries. Keep in refrigerator
