Fresh Herbed Ricotta Tomato Salad

Ingredients
  • 2 T. extra virgin olive oil
  • 1 T. good quality balsamic vinegar
  • ½ t. kosher salt
  • ½ t. fresh black pepper
  • 2 T. minced garlic
  • ⅓ c. part-skim ricotta cheese
  • 3 T. fresh minced basil
  • 2 lbs. fresh heirloom or Creole tomatoes, cut crosswise into ½” slices
  • ¼ c. torn fresh basil leaves
  • Salt, black pepper
Instructions
  1. Combine the oil, vinegar, ½ t. salt, ½ t. pepper and garlic in a bowl.
  2. Stir with a whisk.
  3. In another bowl, combine ricotta and 3 T. minced basil, stirring with a whisk.
  4. Arrange tomato slices on a platter.
  5. Sprinkle with salt and pepper.
  6. Drizzle the olive oil mixture over the tomatoes.
  7. Place a dollop of the ricotta mixture on the center of each tomato slice.
  8. Sprinkle the torn basil leaves across the sliced tomatoes.
