Lemony Baby Yukon and Green Bean Medley

  • 10-12 baby Yukon, cleaned, quartered
  • 10-12 oz. fresh green beans, cleaned
  • ½ pt. red cherry tomatoes, halved
  • ½ pt. yellow cherry tomatoes, halved
  • 1 medium Vidalia onion, thinly sliced or chopped
  • ½ pt. sliced mushrooms
  • Salt, black pepper, garlic powder
  • ¼ c. Worcestershire sauce
  • ¼ c. Balsamic vinegar
  • ¼ c. Marzetti “Simply Dressed Vinaigrette”-Lemon
  • Olive oil
  • 1 fresh lemon, sliced
  1. In a baking dish, line with foil (enough to overlap and seal). Spray with PAM.
  2. In a large bowl, combine the potatoes, beans, tomatoes, onion, and mushrooms.
  3. Season with salt, black pepper and garlic powder.
  4. Drizzle with olive oil.
  5. Mix well.
  6. Pour on top the Worcestershire, balsamic and lemon vinaigrette.
  7. Mix well.
  8. Pour into foil lined baking dish.
  9. Lay the sliced lemon across the top.
  10. Fold the foil to create a sealed dish.
  11. Bake 375 for 35-40 minutes until potatoes are tender.
