Crispy Green Bean Slaw

Ingredients
  • 3 T. olive oil
  • 3 T. white wine vinegar
  • 2 T. honey
  • 1 T. kosher salt
  • 1 T. black pepper
  • 4 c. green beans or haricots verts
  • 2 c. thinly sliced red cabbage
  • 1 c. shredded carrots
  • 1 c. thinly sliced red bell peppers
Instructions
  1. Whisk together oil, vinegar, honey, salt and pepper for the vinaigrette.
  2. Blanch beans in boiling salted water, 2 minutes.
  3. Transfer beans to ice water to stop cooking. Drain.
  4. Slice green beans, lengthwise.
  5. Toss beans, cabbage, carrots and bell peppers with the vinaigrette.
