Fresh Sweet Corn Succotash Gratin

Ingredients
  • 4 T. butter
  • 1 c. diced Vidalia onion
  • 1 T. minced garlic
  • 3 c. fresh corn kernels
  • 8 oz. fresh green beans, trimmed, bias-sliced
  • 1 red bell pepper, diced
  • 1 c. frozen shelled edamame, thawed
  • Salt and red pepper to taste
  • 2 T. flour
  • 2 eggs
  • 1 c. heavy cream
  • 1 c. shredded Parmesan, divided
  • ½ c. sliced green onions
  • ½ c. panko bread crumbs
  • 1 T. extra virgin olive oil
Instructions
  1. Preheat oven 400.
  2. In large skillet, melt butter. Add onions and garlic and cook until softened.
  3. Stir in corn beans, bell pepper, edamame. Season. Cook until veggies are soften and liquid releases and evaporates, 8-10 minutes.
  4. Stir in flour and cook 1-2 minutes. Cool slightly.
  5. Whisk eggs and cream in large bowl.
  6. Stir in cooled veggies along with ½ c. parmesan and green onions.
  7. Place in 2 qt. baking dish that is sprayed with PAM.
  8. Combine panko, oil and remaining parmesan. Sprinkle over top of casserole.
  9. Bake until filling is set and top is golden brown, 20-30 minutes.
