Baked Parmesan Crusted Squash Rounds

Ingredients
  • 4 c. thinly sliced yellow summer squash (about 3 or 4)
  • ΒΌ c. olive oil
  • Salt, red/black pepper
  • 1 c. panko bread crumbs
  • 1 c. freshly grated parmesan cheese
Instructions
  1. Preheat oven 450.
  2. Place squash in bowl.
  3. Add oil and seasonings. Toss to coat.
  4. In shallow bowl, mix bread crumbs and cheese.
  5. Dip squash in crumb mixture to coat both sides. Patting to help coating to adhere.
  6. Place on parchment paper-lined baking sheets.
  7. Bake 20-25 minutes or until golden brown. Rotate pans halfway through baking.
  8. You can sprinkle extra cheese on top after removing from oven.
