Baked Parmesan Crusted Squash Rounds
- 4 c. thinly sliced yellow summer squash (about 3 or 4)
- ΒΌ c. olive oil
- Salt, red/black pepper
- 1 c. panko bread crumbs
- 1 c. freshly grated parmesan cheese
- Preheat oven 450.
- Place squash in bowl.
- Add oil and seasonings. Toss to coat.
- In shallow bowl, mix bread crumbs and cheese.
- Dip squash in crumb mixture to coat both sides. Patting to help coating to adhere.
- Place on parchment paper-lined baking sheets.
- Bake 20-25 minutes or until golden brown. Rotate pans halfway through baking.
- You can sprinkle extra cheese on top after removing from oven.
