Scoop about ¼ c. ice cream onto smooth side of half of brownies.
Top with remaining brownie, pressing gently.
Roll edge of sandwiches in assorted toppings.
Wrap in saran wrap and freeze immediately.

*****This does require an actual Ice Cream Sandwich Pan. I have also used boxed brownie mix when in a hurry and after baking and letting it cool, I use a circular cutter like a biscuit cutter or cookie cutter to make my rounds. You have to do about 3-4 boxes of bought brownie mix to get large enough flat brownies to cut.
