Sweet Pickled Banana Peppers

Ingredients
  • ½ lb. banana peppers, seeded and sliced crosswise into rings
  • PICKLING JUICE:
  • 2 c. white vinegar
  • ⅔ c. white sugar
  • 1 t. mustard seeds
  • 1 t. celery seed
  • 1 t. salt, optional
  • 2 t. red pepper flakes, optional
Instructions
  1. Sterilize two ½ pint jars.
  2. Bring all the pickling ingredients to a rolling boil.
  3. Place peppers in jars.
  4. Pour hot juice to within ½” of the top.
  5. Be sure edge of jar has on juice on it.
  6. Place lids and screw on bands finger-tips tight.
  7. Seal jar and leave 2 weeks.

*****Refrigerate once open it.
