Crustless Zucchini Pie
- 3 c. grated fresh zucchini (this will be 2-3 medium size)
- 1 medium Vidalia onion, chopped
- 1 c. flour
- 1 t. baking powder
- 1 t. red pepper, or to taste
- 1 t. salt, or to taste
- 1 t. black pepper, or to taste
- 1 c. grated Italian Blend Cheeses or your favorite
- 3 eggs, beaten
- ¼ c. olive oil
- ¼ c. chopped fresh basil
- ½ c. grated Parmesan cheese, divided
- Preheat oven 350.
- Combine all of the ingredients in a large bowl, reserving 2 T. parmesan cheese.
- Spoon the mixture into a 10” round glass pie plate or metal pie pan that is coated with PAM.
- Bake 45-50 minutes or until golden brown.
- Remove from oven and sprinkle with remaining cheese, add more if you desire.
- Cool 10 minutes before slicing.
*****Freezes well after baking.
