Golden Squash Blooms and Summer Squash Salad

Ingredients
  • 2 lbs. summer squash (mixture of yellow crookneck and zucchini)
  • 12 fresh mint leaves, torn
  • 2-3 fresh jalapeno peppers, seeded and minced
  • ¼ c. toasted pine nuts
  • Juice and zest of 1 lemon
  • 2 T. white wine vinegar
  • 2 T. extra virgin olive oil
  • Salt and black pepper to taste
  • ¼ lb. freshly shaved pecorino cheese
  • 4 large squash blossoms, stemmed and torn in half
  • 1. With a mandolin or veggie peeler, shave the zucchini into thin strips and cut the yellow squash into thin rounds and place in a large bowl.
  • 2. Add the mint, blossoms, jalapeno, pine nuts, juice and zest. Season with salt and pepper.
  • 3. Gently toss.
  • 4. Transfer to salad plates and top with shaved pecorino.
  • GOLDEN SQUASH BLOSSOMS (STUFFED):
Instructions
  1. This can be a rare delicacy. If you have good size blossoms, take them and clean well and drain well. You can stuff them with various ingredients and either grill, pan-saute or bake them.
  2. I like to do some of the following:
  3. - Make a mixture of a nice soft cheese like goat, boursin, etc. and mix with some nice fresh herbs and stuff the blossoms. Using a long stem of a green onion, tie off the end. Then grill, etc. until the outside is charred and cheese is warm and gooey. So good.
  4. - If you have any leftover stuffings made with rice, beans, corn, etc. You can stuff the blossoms or even add cheese to the rice mixtures and tie them off like in step above. I have taken leftover rice dressing and mixed in some edamame beans or black beans or fresh corn with some nice grated cheese and stuffed them. Wonderful!!!
