Butternut Squash Pasta
- 1 lb. butternut squash (already peeled, seeded and cut into cubes) if not buy 1 large whole one and peel, seed and cut into cubes
- 1 vidalia onion, chopped
- 1 large green bell pepper, chopped
- 2 celery stalks, chopped
- 3 T. minced garlic
- 1 (16-oz.) can diced tomatoes
- 1 (8-oz.) can tomato sauce
- 1 (6-oz.) can tomato paste
- 1 T. dried oregano
- 1 T. dried basil
- Salt, black pepper, garlic powder
- 1 c. elbow or shell pasta
- 1 c. mozzarella cheese
- Place the squash and all the ingredients except pasta and cheese in crock pot.
- Cook on LOW for 6 hours.
- Add in pasta and cook on LOW for 2 more hours.
- Add cheese. Serve when cheese begins to melt
