Minty Chocolate Sorbet

Ingredients
  • 4 ½ c. water
  • 2 c. sugar
  • 1 c. unsweetened cocoa powder
  • ½ t. salt
  • ½ t. mint extract
  • Fresh mint leaves for garnish
Instructions
  1. In large saucepan, whisk the water with the sugar, cocoa powder and salt until smooth.
  2. Cook over medium-low heat, whisking frequently until sugar is dissolved.
  3. Remove from heat.
  4. Stir in extract.
  5. Pour mixture into a shallow container and refrigerate for 4-6 hours or until very cold.
  6. Pour mixture into electric ice cream maker and freeze accordingly to the directions of the machine.
  7. If you prefer the mixture to be firmer, transfer to an airtight container (after removing from ice cream machine). Freeze until firm.
  8. Garnish with mint.
