Zucchini Nut Bread

Ingredients
  • 3 c. flour
  • 1 T. baking powder
  • ½ t. baking soda
  • ¾ t. salt
  • 1 t. ground cinnamon
  • 1 t. ground nutmeg
  • 2 c. sugar
  • ¾ c. vegetable oil
  • 3 large eggs, lightly beaten
  • 2 t. vanilla
  • 3 c. shredded zucchini
  • 1 c. chopped pecans or walnuts
Instructions
  1. Combine first 6 ingredients in a large bowl.
  2. Make a well in the center.
  3. Combine sugar, oil, eggs and vanilla. Mix well.
  4. Add this to the dry ingredients into the well you made. Stirring just until moistened.
  5. Stir in zucchini and nuts.
  6. Spoon batter into 2 lightly greased loaf pans.
  7. Bake 350 for 50 minutes or until wooden pick inserted in center comes out clean.
  8. Cool in pans on wire racks for 10 minutes. Remove from pans and cool completely on wire racks.
