Zucchini Nut Bread or Zucchini Cheese Bread
- 3 c. flour
- 1 T. baking powder
- ½ t. baking soda
- ¾ t. salt
- 1 t. ground cinnamon
- 1 t. ground nutmeg
- 2 c. sugar
- ¾ c. vegetable oil
- 3 large eggs, lightly beaten
- 2 t. vanilla
- 3 c. shredded zucchini
- 1 c. chopped pecans or walnuts
- Combine first 6 ingredients in a large bowl.
- Make a well in the center.
- Combine sugar, oil, eggs and vanilla. Mix well.
- Add this to the dry ingredients into the well you made. Stirring just until moistened.
- Stir in zucchini and nuts.
- Spoon batter into 2 lightly greased loaf pans.
- Bake 350 for 50 minutes or until wooden pick inserted in center comes out clean.
- Cool in pans on wire racks for 10 minutes. Remove from pans and cool completely on wire racks.
