Rolled-Up French Toast
- 8 slices whole wheat bread
- 2 eggs
- 3 T. milk
- ⅓ c. sugar
- 2 t. ground cinnamon
- 1 t. ground nutmeg
- Butter, for coating skillet
- FILLING OPTIONS:
- Softened cream cheese
- Canned fruit fillings
- Sliced fresh fruit, like apples, pears, peaches, bananas
- Peanut butter
- Jellies
- Cut crusts from the bread and flatten with rolling pin.
- Spread the desired filling on one side of the bread.
- Tightly roll up the slice of bread.
- In a shallow dish, beat eggs and milk and whisk together.
- In another bowl, combine the sugar, cinnamon and nutmeg.
- In a skillet, melt butter to coat inside of skillet.
- Dip each roll in egg mixture and place in skillet.
- Cook 3-4 in each batch, turning until roll is browned.
- Dip in the sugar mixture and roll until completely covered.
- Serve immediately.
