Turkey and Yam Frittata

Ingredients
  • 6 large eggs
  • 4 large egg whites
  • Salt and black pepper
  • 2 oz. Gruyere cheese or your favorite cheese
  • 1 T. olive oil
  • 2 small shallots, minced
  • 12 oz. peeled yams or sweet potatoes, diced into ½” cubes
  • 2 t. fresh thyme
  • ½ t. garlic powder
  • ½ t. paprika
  • 8 oz. leftover turkey breast, chopped or chicken
  • 1 loose cup of rough chopped fresh baby spinach or kale
Instructions
  1. Preheat oven 400.
  2. Crack eggs and egg whites in large bowl.
  3. Add salt and pepper and beat until blended.
  4. Mix in cheese.
  5. Heat 10” nonstick oven safe skillet over medium heat.
  6. Add oil and onions to pan and cook until golden.
  7. Add yams, thyme, salt, garlic powder, paprika and pepper.
  8. Cover and cook until yams are crisp and tender.
  9. Add chopped turkey to skillet and stir to mix well.
  10. Add spinach and cook until wilted.
  11. Pour egg mixture into skillet.
  12. Reduce heat to low and cook until edges are set, about 5-8 minutes.
  13. Transfer skillet to oven and bake until the frittata is completely set and cooked through, about 10 minutes.
  14. Remove from oven and cut into wedges.
