Alice's Mini Pumpkin Bites
- 48-premade or store bought miniature tart shells
- ⅓ c. sugar
- ¼ t. salt
- 1 ½ t. pumpkin pie spice
- 1 large egg
- 1 c. pure pumpkin puree
- 1 t. vanilla extract
- 1 (5-oz.) can evaporated milk
- Cool whip, garnish
- Wasabi coated nuts, optional
- Preheat oven 350. Line a baking sheet with parchment paper.
- In medium bowl, with electric hand mixer, combine sugar, salt, pumpkin spice, egg, pumpkin, vanilla and milk. Beat until well combined and smooth.
- Line mini tart shells on baking sheet.
- With a small cookie scoop (2 t.) fill each shell with pumpkin filling.
- Bake 15-17 minutes or until shells are golden and filling appears to be set.
- Carefully remove tarts to a cooling rack.
- To serve, put a dollop of cool whip. I like to place a wasabi nut on top. The contrast of the flavors is great. You can omit if you like.
