Texas Toast Tomato Sandwich
- 1 (9.5-oz.) package five-cheese Texas toast or your favorite
- 2 lbs. heirloom or Creole tomatoes
- ΒΌ c. bottled blue cheese vinaigrette or your favorite dressing
- Kosher salt and fresh black pepper
- 1 bunch fresh basil, rough chop
- Garnishes: crumbled blue cheese and extra basil leaves
- Prepare the Texas toast according to package directions.
- Cut large tomatoes in half and then cut into thick slices.
- Gently toss tomatoes with vinaigrette, basil, salt and pepper.
- Place a generous portion on top of each hot toast and garnish with the crumble blue cheese and basil leaves.
