Spicy Flash-Roasted Broccoli
- 2 oz. sliced good quality pepperoni
- 2 garlic cloves, sliced
- 1 c. Panko bread crumbs
- ΒΌ c. plus 2 T. extra-virgin olive oil
- 2 lbs. fresh broccoli, trimmed and cut into long spears
- Salt, black pepper
- 2 T. Dijon mustard
- Preheat oven 425.
- In mini-food processor, pulse pepperoni with garlic until finely chopped.
- Add the panko and pulse until combined.
- In skillet, heat 2 T. olive oil. Add panko mixture and cook, stirring, until crisp and golden.
- Scrape onto a plate and let cool.
- In a bowl, toss broccoli with remaining olive oil and season with salt and pepper.
- Spread on baking sheet and roast for 15 minutes, turning once, until tender and browned in spots.
- Spread mustard on one side of broccoli and press broccoli into panko mixture.
- Transfer to serving platter and sprinkle with remaining crumbs and serve.
