Cajun Rice Dressing Stuffed Bell Peppers or Tomatoes
- 4-6 multi colored bell peppers, cut in half and seeded
- Cajun Rice Dressing, recipe
- Prepare the rice dressing. Set aside.
- Prepare the bell peppers, cut in half and seed. Parboil for about 3-5 minutes. Do not overcook. Drain and cool.
- Stuff peppers with Rice Dressing.
- Place in baking dish.
- Refrigerate until ready to cook.
- Cover with foil and heat in 350 oven until hot, about 20 minutes.
You can add many things to the rice dressing like toasted corn, black beans, etc.
