Chipotle Buttered Corn
- 6 ears of fresh corn, cut from the cob
- 3 T. butter
- 1 T. chipotle chile in adobo sauce, finely chopped
- 2 t. ground cumin
- 1 T. lemon zest
- Kosher salt, fresh black pepper
- 3 T. minced fresh chives or parsley
- In a large skillet, melt the butter.
- Add the chipotle chile, zest and cumin. Saute for about 1 minute.
- Add the cut corn and cook until tender crisp, about 2-3 minutes.
- Season with salt and pepper to taste.
- Garnish with chives or parsley.
*****Great to stuff peppers or garnish stuffed potatoes, mixed in tomato soup or other soups, garnish for salads. It is pretty good on most things.
