Potato Salad with Hummus-Yogurt Dressing

Ingredients
  • 2 lbs. Yukon gold potatoes
  • ½ c. hummus
  • ¾ c. nonfat plain yogurt
  • 1 c. finely chopped celery
  • ½ c. finely chopped red onion
  • ¼ c. finely chopped sweet pickles
  • ½ c. finely chopped parsley
  • Salt and black pepper to taste
Instructions
  1. In large pot, cover potatoes with salted water and bring to boil. Simmer and cook until tender.
  2. Drain and let cool. Peel or leave skins on and cut into 1” pieces.
  3. In bowl mix hummus with yogurt, celery, pickles, onion and parsley.
  4. Fold in potatoes and season to taste.
  5. Cover and refrigerate until ready to serve. Can be stored overnite.
