Potato Salad with Hummus-Yogurt Dressing
- 2 lbs. Yukon gold potatoes
- ½ c. hummus
- ¾ c. nonfat plain yogurt
- 1 c. finely chopped celery
- ½ c. finely chopped red onion
- ¼ c. finely chopped sweet pickles
- ½ c. finely chopped parsley
- Salt and black pepper to taste
- In large pot, cover potatoes with salted water and bring to boil. Simmer and cook until tender.
- Drain and let cool. Peel or leave skins on and cut into 1” pieces.
- In bowl mix hummus with yogurt, celery, pickles, onion and parsley.
- Fold in potatoes and season to taste.
- Cover and refrigerate until ready to serve. Can be stored overnite.
