Homemade Sweet and Spicy Cucumbers

Ingredients
  • 6 cups unpeeled pickling cucumbers, sliced thin
  • 1 large Vidalia onion, sliced thin
  • 1 large green bell pepper, sliced
  • 4-6 red/green chili peppers, optional
  • 1 T. kosher salt
  • 1 c. apple cider vinegar
  • 1 ½ c. sugar
  • 1 t. celery seed
  • 1 t. mustard seed
  • 1 t. red pepper
  • 1 t. Chef Paul Prudhomme’s Magic Seasoning Blend-“Sweet and Spicy”
Instructions
  1. Place the sliced cucumbers, onions and bell peppers in a bowl with the salt. Set aside and stir once in a while.
  2. In a saucepan, mix the vinegar, sugar, celery seed, mustard seed, red pepper and magic seasoning blend.
  3. Bring to a boil. Remove from heat and let cool for at least 1 hour.
  4. Pour the cooled mixture over the cucumber mixture. Mix well.
  5. Place the mixture in the size jars you would like and store in refrigerator for at least 24 hours before eating.
  6. Keep in refrigerator. Will keep for 2 months
