Ingredients
  • 1 lb. medium shrimp, peeled and deveined
  • Olive oil
  • Salt, red/black pepper, garlic powder
  • 2 (15-oz.) cans white beans, drained and rinsed
  • 1 large tomato, cut into ½” dice
  • 3 T. chopped red onion
  • 3 T. chopped fresh cilantro or parsley
  • 3 T. fresh lime juice
  • Crushed red pepper flakes
  • 2 small avocados, peeled, pitted and cut into ½” dice
Instructions
  1. Preheat oven 400. Line a rimmed baking sheet with foil.
  2. In bowl, toss shrimp with oil to coat. Season with salt, red/black pepper and garlic powder.
  3. Spread shrimp in a single layer on baking sheet.
  4. Roast until just cooked through, about 3-5 minutes.
  5. Transfer to bowl. Let cool slightly.
  6. Add beans, tomato, onion and cilantro with shrimp.
  7. Whisk about 2-3 T. olive oil, lime juice and crushed red pepper flakes in a bowl.
  8. Pour over salad. Toss to combine.
  9. Fold in avocados. Season to taste.
