Ingredients
  • 1 lb. fresh green beans or steamer bag of fresh green beans
  • ½ red onion, chopped
  • 1 T. minced garlic
  • 2 T. chopped fresh basil
  • 3 T. red wine vinegar
  • 3 T. extra virgin olive oil
  • Juice of 1 large lemon
  • 1 dozen of each (red & yellow) grape tomatoes, halved
  • Kosher salt, fresh black pepper
  • 1 c. crumbled feta cheese, optional
Instructions
  1. If using fresh string beans, place in boiling salted water for 1-2 minutes. Drain and place in bowl of iced water. Drain well, pat dry and place beans in large bowl.
  2. If using the fresh steamer bags, put in microwave for 3 minutes, drain and place in bowl.
  3. Mix together the red onion, garlic, basil, vinegar, olive oil, lemon juice and tomatoes.
  4. Season to taste.
  5. Pour over the green beans. Mix well and season to taste again.
  6. Add the feta cheese if you desire. You can also use goat cheese or blue cheese crumbles if desired.
  7. This can be served cold or at room temperature.
