Ingredients
  • 4 T. butter, softened
  • 4 egg whites
  • 1 (8-oz.) block cream cheese, softened
  • ½ c. finely chopped red onion
  • ¼ c. finely chopped red bell pepper
  • ¼ c. finely chopped green bell pepper
  • 1 (15 ¼-oz.) can Mexi-whole kernel corn, drained
  • 1 (14 ¾-oz.) can cream style corn
  • 1 (8 ½-oz.) pkg. Jiffy corn muffin mix
  • 1 t. black pepper or to taste
  • PAM
Instructions
  1. Preheat oven to 375.
  2. In large bowl, combine the butter, egg whites and cream cheese.
  3. Whisk until smooth.
  4. Stir in onion, bell peppers, corn and mix well.
  5. Add the muffin mix and black pepper, stirring until well combined.
  6. Pour into 11x7” baking dish that is sprayed with PAM.
  7. Bake for 45-50 minutes or until wooden pick inserted in center comes out clean.
