Ingredients
  • 1 ½ lbs. Brussels sprout, trimmed and thinly sliced
  • 3 c. yams, peeled and cut into ½” cubes
  • 2 ½ c. Vidalia onion, sliced
  • Olive oil
  • Crushed red pepper flakes
  • Salt
  • 3 T. cider vinegar
  • 1 T. Dijon mustard
  • 2 t. honey
Instructions
  1. Preheat oven 450. Line 2 large baking sheets with foil and lightly brush with olive oil.
  2. Place the Brussels sprout, yams and onion in a bowl and drizzle with olive oil, add red pepper flakes and salt. Toss to mix well.
  3. Arrange in a single layer on baking sheets.
  4. Roast, stirring occasionally until golden brown and tender, 20-30 minutes.
  5. In a large bowl, whisk together vinegar, mustard, honey and 2 T. olive oil.
  6. Add veggies, toss to coat and taste for seasoning.
