Ingredients
  • 1 ½ sticks unsalted butter, softened
  • ½ c. light brown sugar
  • ½ c. granulated sugar
  • 6 oz. milk chocolate, melted and cooled slightly
  • 1 T. vanilla
  • 1 ¾ c. flour
  • 1 T. unsweetened cocoa
  • 1 t. baking soda
  • ½ t. salt
  • FILLING:
  • 1 stick unsalted butter, softened
  • ½ c. chocolate malt powder (like Ovaltine)
  • ½ t. vanilla
  • 2 c. powdered sugar
Instructions
  1. Preheat oven 350 and line 2 baking sheets with parchment paper.
  2. COOKIES: In large bowl, using electric mixer, beat butter with the two sugars until smooth. Add the melted chocolate and vanilla and beat until smooth.
  3. In small bowl, whisk flour, cocoa powder, soda and salt. Add dry ingredients to bowl to the sugar bowl and beat at low until incorporated.
  4. Roll dough between 2 sheets of parchment to ½” thickness and refrigerate until firm, about 12-15 minutes.
  5. Using 2” round cookie cutter, stamp out as many rounds as possible and transfer to baking sheets, 1” apart. With scraps, gather together, chill 10 minutes and roll out and cut more rounds.
  6. Bake for 10 minutes until dry and set. Transfer to rack and cool.
  7. FILLING: In bowl, using electric mixer, beat butter with malt powder at medium speed until light. Add vanilla and sugar and beat at low speed until combined. Transfer filling to pastry bag fitted with ½” plain tip. Arrange half of cookies on work surface, bottom side up and pipe a 1” mound of filling onto each. Sandwich with remaining cookies and serve.
