In a 6 qt. crock pot/slow cooker, add the bacon, onion, soup, milk, potatoes, ¼ c. of chives and some salt and black pepper. Mix well. You can add more for additional seasoning.
Cover and cook on HIGH for 3-4 hours or until potatoes are tender.
Add cheese and stir until melted and taste for seasoning.
Garnish with remaining chives.
