Chicken Lasagna Caesar Style

Ingredients
  • PAM
  • 9 dried whole wheat or regular lasagna noodles
  • 2 (10-oz.) containers refrigerated Alfredo pasta sauce
  • 3 T. fresh lemon juice
  • Cracked black pepper, salt
  • 3 c. chopped cooked chicken breasts
  • 1 (10-oz.) pkg. frozen chopped spinach, thawed and very well drained
  • 1 c. roasted red bell peppers, chopped
  • 1 c. shredded Italian cheese blend
  • Cherry tomatoes, halved
  • Fresh thyme sprigs or fresh basil, garnish
Instructions
  1. Preheat oven 325.
  2. Lightly coat 3 qt. rectangular baking dish with PAM.
  3. Cook noodles according to package directions. Drain. Rinse with cold water and drain again.
  4. In bowl, combine Alfredo sauce, black pepper, salt and lemon juice.
  5. Stir in chicken, spinach and peppers. Taste for seasoning.
  6. Arrange three noodles in bottom of pan. Top with ⅓ of chicken mixture. Repeat layers twice.
  7. Bake, covered 45-55 minutes or until heated.
  8. Sprinkle with cheese.
  9. Bake uncovered, about 5 minutes or until cheese is melted.
  10. Let stand 15 minutes when removed from oven.
  11. Top with tomatoes and thyme springs or fresh basil.
