Heat oven 375. Place paper baking cups into 12 regular sized muffin cups. Spray with PAM.
In a bowl, combine the apple filling ingredients and set aside.
In another bowl, whisk together batter ingredients.
Spoon 1 level T. of batter into paper cups.
Top with 2 T. of apple mixture.
Spool 1 T. of remaining batter over the top of each muffin cup.
Bake 15 minutes or until center is set and edges are golden.
Cool 5 minutes. Remove from muffin pan.
To serve, you can remove the paper lining or leave it. Place the dessert on a serving bowl. Top each with 1 T. Cool Whip, 2 t. caramel sauce and 1 t. nuts.
