Crock Pot Turkey and Black Bean Soup

Ingredients
  • 2 large red onions, halved
  • ¼ c. olive oil
  • 4 carrots, cut into large chunks
  • 3 T. minced garlic
  • 1 T. flour
  • 1 lb. dried black beans, rinsed
  • 2 lbs. smoked turkey drumstick
  • 3 T. pickling spice, tied in cheesecloth
  • 1 t. red pepper flakes
  • Kosher salt, black pepper
  • ½ c. chopped fresh cilantro or parsley
  • Sour cream, lime wedges, garnish
Instructions
  1. Set aside ½ onion and chop rest.
  2. Heat olive oil in large skillet over medium heat.
  3. Add chopped onions, carrots and garlic. Sprinkle with flour and cook, stirring until slightly browned.
  4. Add 2 T. water and scrape up any browned bits from the pan.
  5. Transfer veggies and cooking liquid to a crock pot.
  6. Add beans, drumstick, pickling spice packet, red pepper flakes and 8 cups of water.
  7. Cover and cook on LOW, 6 hours.
  8. Remove drumstick and shred meat. Keep warm.
  9. Remove 2 c. of beans, then, partially puree the soup in pot with immersion blender.
  10. Return beans and turkey meat to soup.
  11. Season to taste.
  12. Mince the reserved ½ onion.
  13. Top soup with cilantro and minced onion.
  14. Serve with sour cream and lime wedge.
