Fresh Sac-a-Lait with Shrimp and Veggie Packets
- 4 fresh sac-a-lait (or your favorite whole fish, seasoned)
- Salt, red/black pepper, garlic powder
- 2 lemons, sliced
- 1 lb. medium shrimp, seasoned
- 1 (6-8 oz.) fresh pic de gallo
- 1 pt. mixed cherry tomatoes, halved
- 1 bunch fresh green onions, chopped
- 1 bottle Wishbone Italian dressing
- Spread two sheets of heavy-duty foil in a cross type overlap. Spray with PAM.
- Spread the slices of one lemon on the bottom.
- Place the seasoned fish on top of lemon slices.
- Place the slices on second lemon on top of fish.
- Top with seasoned shrimp.
- Top with halved tomatoes.
- Top with chopped green onions.
- Drizzle the whole item with Italian dressing.
- Fold up foil to make an air tight packet.
- Place on baking sheet and cook at 400 for 30-45 minutes, depending on size of fish.
- The last 20 minutes, open the foil packet and let cook. This helps to deepen the color.
*****This can be done on a grill as well.
