Peas and Prosciutto

Ingredients
  • Good quality olive oil
  • 3 shallots, minced
  • ½ red onion, finely sliced
  • 1 T. minced garlic
  • 1 (1 lb.) bag frozen peas, thawed
  • 6 oz. (1/8” thick slices) prosciutto, diced
  • ¼ c. fresh parsley, chopped
  • Salt and fresh black pepper
Instructions
  1. Drizzle olive oil in bottom of large skillet. Heat to medium-high.
  2. Add shallots, red onion, garlic and saute until tender. Add salt and pepper.
  3. Add peas and heat through.
  4. Stir in prosciutto and cook for 2 minutes.
  5. Add parsley, remove from heat, mix well and season to taste. Serve.
Notes
*****You can used cooked fresh peas.
