White Chocolate Key-Lime Mug Cake
- 1 large egg
- 1 ½ T. vegetable oil
- 1 T. sour cream
- Finely grated zest of 2 key limes or 1 regular lime
- 2 T. key lime juice
- ¼ c. sugar
- ¼ c. self-rising flour
- Pinch of kosher salt
- ¼ c. white chocolate chips
- In large mug, whisk together egg and oil with a fork.
- Stir in sour cream, lime zest, lime juice and sugar.
- Add flour and salt.
- Beat batter until smooth.
- Divide the batter between two mugs.
- Microwave separately for 30 seconds each.
- Top each mug with half of the chips, then continue to cook each mug 1 to 1 ½ minutes more until risen and firm.
*****Topping ideas: Lime glaze, lime curd, crème fraiche, shredded coconut, chopped macadamia nuts, candied lime zest or wedge of lime.
