Tomato and Spinach Tortellini Soup

Ingredients
  • 1 T. olive oil
  • 1 medium Vidalia onion, chopped
  • 1 T. minced garlic
  • 4-6 c. chicken or veggie broth
  • 1 (14-oz.) can diced tomatoes
  • 1 (9-oz.) package fresh tortellini
  • Salt, black pepper
  • 10 oz. fresh baby spinach
  • ½ c. freshly grated parmesan cheese or Swiss
Instructions
  1. In soup pot, heat olive oil.
  2. Saute onion and garlic, until onions are translucent, about 5 minutes.
  3. Add broth and tomatoes. Turn heat up and bring to a boil.
  4. Add tortellini and cook according to package directions.
  5. When tortellini is almost done, add spinach and add seasoning to taste.
