Warm Bacon Brussels Sprout Slaw
- 1 lb. thick-sliced good quality bacon, cut into ½” slices (if you want hickory smoked, etc. just add)
- 4 T. butter
- 2 lbs. fresh Brussels sprouts, thinly slice in food processor
- Salt and black pepper
- 2 Granny Smith apples, peeled, cored, coarsely shredded and squeezed dry
- 1 t. thyme leaves
- In large skillet, cook bacon and stir occasionally, until crisp.
- Drain on paper towels. Reserve ¼ c. bacon fat.
- In large, enameled cast-iron casserole, melt butter in with bacon fat.
- Add sprouts in batches and cook over high heat, stirring until soft but still bright green.
- Season.
- Add apples and thyme. Cook until apples are warm.
- Transfer slaw to platter, scatter with bacon and serve.
